WHY CHOOSE OUR MICROGREENS?

Seeds come packed with everything a young plant embryo needs to thrive, nourishing itself on carbs, lipids, & proteins stored in a reserve called the endosperm. The emerging plant, called a cotyledon, mobilizes stored nutrients from the endosperm when it germinates. Harvesting these plants soon after they emerge means you are catching the plant at the most nutritious stage in its life.

Studies show ‘vegetable confetti’ offers up to 40% more phytochemicals (nutrients) than the same plants reared to maturity. While it depends on what species of micro, they are often especially high in:

Additionally, rapid farm-to-table and refrigeration practices means unstable nutrients (vitamin C & B groups) are more likely to make it to your plate.

USES

Micros can be washed and enjoyed directly out of the package as a stand-alone snack, but some of the best uses for them include:

-Garnishing dishes for a punch of fresh flavor, color, and crisp texture

-Added to smoothies

-Topped on salads, sandwiches, soups

-Juiced into shots

HOW LONG DO THEY LAST?

Depending on the variety, microgreens can last for up to two weeks if stored properly. We recommend keeping them refrigerated, preferably in the vegetable drawer. If your microgreens have begun to wilt, you can soak them in a bath of ice water for about 20 minutes right before use to refresh them.


Because each microgreen offers a unique flavor & nutrient profile, below are more specific descriptions for each of the microgreen varieties we offer here at Tabula Rasa

DETROIT DARK RED BEET

This delicious variety is sweet and earthy, with a striking red color worthy of brightening up any dish. Beets offer undoubtable cardiovascular benefits due to their concentration of nitrates. Nitrates are converted into nitric oxide in the body, helping to relax your blood vessels and reap benefits such as reduced blood pressure and lower risk of cardiovascular events. Further, they offer high levels of folate, manganese, and betalains.

USES: Avocado toast, on top of grilled meats, and a flavorful addition to salads

SPECKLED PEA

Pea shoots are crunchy, slightly more acidic tasting than regular peas, and reminiscent of snow peas. Very rich in vitamin C and minerals like iron, manganese, and choline. They are one of the prettiest microgreens we sell with unique tendrils.

USES: Best topped on sandwiches for a wonderful crunch, or eaten fresh out of the box (after washing)

SUNFLOWER

Sunflower microgreens have a sweet, nutty flavor with undertones of lemon. They are rich in vitamin A, important for vision and immune health, essential fats and vitamin D needed for immune health and to stave depression, and 8 of the 9 essential amino acids.

USES: Sunflower can be used as a base for salads, blended with a wheatgrass shot, or used like the others with soups and salads. Here at TR we enjoy this variety alone as a snack.

BROCOLLI

Broccoli makes for one of the most potent microgreens we stock. With a slightly more mild taste than its adult counterpart, micro broccoli offers a quality nutty flavor to any dish. What makes this variety stand out from the crowd is its particular richness in sulforaphane- a compound demonstrated to be effective in treating or preventing various forms of cancer.

USES: Best added to soups, salads, and sandwiches

CILANTRO

Cilantro microgreens start with a clean almost citrus-like taste, fading into a robust cilantro flavor and ending with peppery notes. Some customers say that the microgreen version of this plant does not have the offensive soap like flavor or smell that haunts adult cilantro. It boasts three times the amount of vitamin A that adult cilantro has. It is high in other nutrients and antioxidants, such as vitamin C, K, E & carotenoids.

USES: Any place you use regular cilantro- eggs, salsa, tacos- the diminutive version is sure to be an even bigger hit

BUCKWHEAT

Buckwheat micros boast a mild but refreshing tangy-citrus like flavor. Like broccoli, they are high in sulforaphane. They are also rich in antioxidants like vitamin A & C, plus minerals such as calcium, iron, and phosphorus. Note: despite its name, buckwheat is not actually a wheat- it is actually in the same family as rhubarb.

USES: Wraps and salads are our favorite way to enjoy buckwheat greens

RUBY RED SWISS CHARD

Swiss chard microgreens have a classic leafy-green flavor, with an earthiness similar to that of spinach or beets. With vivid red stems, these microgreens offer an unbeatable pop of color and freshness to your plate. Notably high in beta-carotene, vitamins A, K, & E and minerals such as iron and manganese.

USES: Any dish where you want a pop of color, or substitute it anywhere you would use regular spinach or greens.
